Easy homemade scones using The Alternative Bread Co. Scone Mix
Ingredients
- 395g Gluten Free Scone Mix
- 100g frozen butter (grated)
- 300ml milk + 3 Tbsp lemon juice or vinegar
Choose your flavour
Cheese Scones- 2 cups grated cheese
- ¼ tsp mustard powder
- Pinch cayenne
- 2–3 Tbsp sugar
- 2 Tbsp sugar
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1½–2 cups chopped dates
- Zest & juice of 1 orange
Prep tip: Soak chopped dates in orange juice with a little boiling water for 10 minutes. Drain and reserve the liquid to brush on top before baking.
Method
- Preheat oven to 220°C fan bake
- Mix milk and lemon juice, then set aside to sour
- Add butter to dry mix and mix through until evenly combined
- Stir in your chosen flavour ingredients
- Make a well in the centre and pour in the milk mixture
- Gently mix with a knife, then bring dough together by hand (do not overmix)
- Shape dough into a rectangle about 2.5cm thick
- Cut into 6–8 pieces and place on a lined baking tray
- Brush tops with:
- Milk (sweet scones)
- Reserved orange liquid (date & orange)
- Extra cheese (cheese scones)
- Bake for 20–30 minutes until golden
