You will need

  • 150g Wholesome Bread Mix
  • 100g Coconut
  • 150g Buckwheat groats, almonds, or a mixture of both
  • 150g Butter or non dairy alternative
  • 50g Honey
  • 2 tsp Ground ginger
  • Pinch of salt
      For the Ginger Icing:
      • 150g Butter  or non dairy alternative, softened
      • 130g Honey
      • 4 tsp Ground Ginger

      Get ready to enjoy a sweet and spicy treat with our No Bake Ginger Slice! This easy-to-make dessert features a crunchy base of wholesome bread mix, coconut, and nuts, all held together with honey and butter. Topped with a creamy ginger icing, it’s the perfect blend of flavours and textures. With no baking required, you can whip this up in no time and enjoy a delicious slice of happiness.       Prepare the Base:

      Blend the coconut and buckwheat groats until they form a flour-like mixture. Leave it slightly chunky if you prefer a crunchier base.

      In a medium bowl, combine the blended flour, Wholesome Bread Mix, ground ginger, and salt.

      Melt the butter and honey together, making sure they do not boil. Add this mixture to the dry ingredients and mix until well combined.

      Line a 25x25cm cake tin with baking paper.

      Press the dough firmly into the tin and level the top.

      Chill in the fridge while preparing the icing.

      Make the Ginger Icing:

      Beat the softened butter until creamy.

      Add the honey and continue to beat until the mixture is light and fluffy.

      Add the ground ginger and beat again until well combined.

      Spread the ginger icing evenly over the chilled base.

      Chill for at least 30 minutes before cutting into slices.

      Store the ginger slices in an airtight container in the fridge.
