You will need

  • 300gm Spiced Bread Mix
  • 125gm butter
  • 100gm white sugar
  • 100gm brown sugar
  • 1 egg or flax egg
  • 4 mashed bananas
  • 1 tsp gluten free baking powder
  • 1 tsp baking soda dissolved into ¼ cup warm milk

This quick and easy banana bread is perfect for using up any bananas you have lying around. We used a combination of bananas from our freezer stash and a couple of ones that were singing out for baking.

Cream the butter and sugars together until they are light and fluffy.

Mix in the egg and mashed bananas.

Mix in the Spiced Bread Mix and baking powder.

Add in the milk and baking soda mixture. Mix together to combine.

Put into lined baking tins. Can be made into one large loaf or two smaller loaves.

Cook at 180°C until golden and skewer comes out clean, approximately 45 minutes for a large loaf.

Cool before slicing.
