You Will Need

  • 300gm Spicy Fruit Mix
  • 125gm Butter
  • 100gm White Sugar
  • 100gm Brown Sugar
  • 1 Egg
  • 4 Mashed Bananas
  • 1 tsp Gluten Free Baking Powder
  • 1 tsp Baking Soda dissolved into ¼ cup warm milk

This quick and easy banana bread is perfect for using up any bananas you have lying around. We used a combination of bananas from our freezer stash and a couple of ones that were singing out for baking.

 

Method

Cream the butter and sugars together until they are light and fluffy

Mix in the egg and mashed bananas.

Mix in the Spicy Fruit breadmix and baking powder.

Add in the milk and baking soda mixture and mix to combine.

Put into lined baking tins. Can be made into one large loaf or two smaller loaves.

Cook at 180°C until golden and skewer comes out clean, approximately 45 minutes for a large loaf.

Try and let cool before eating.

Breadmaker Option:

Mix all ingredients together in a bowl and then transfer to your breadmaker tin.
Select the gluten free setting.
