You will need

  • 250g Wholesome Bread Mix
  • 100g butter
  • 90g rice or golden syrup
  • 125 g buckwheat groats
  • 60g coconut
  • 80g brown or coconut sugar
  • 1 tsp baking soda
  • 2 Tbsp boiling water

Preheat your oven to 180°C. Prepare two baking trays with either baking paper or lightly greased.

In a medium pot melt the butter and syrup over a low heat.

In a bowl combine the bread mix, buckwheat groats, coconut and sugar. Add this to the melted butter mixture.

In a small cup dissolve the baking soda in the boiling water and add to the other ingredients.

Combine all together.

Take approx. one heaped teaspoon of dough and roll into balls, place on your tray. Leave room for spreading. Gently press down each biscuit with the bottom of a glass. Dip the glass in water, shaking off excess water before each press, this will prevent sticking and give you an even flat biscuit.

Bake for 12-15 minutes until golden.

Store in an air tight container.
